Spicy Drunken Noodles + Spring Rolls

I actually came across this dish while ordering at the local Edmonton Laotian restaurant called Viphalay. They offer a plethora of authentic and classic Lao dishes as well as Thai dishes. This is called Pad Kee Mao. I fell in-love after the very first bite. The day after, I did what a certified food lover does, I tried to make the dish myself (with my own twists, of course). I must say, I was successful in replicating the dish to the best of my ability. It required a lot of spicy chilli crisp, chilli oil, and rice wine.
The spring rolls are my pride and joy. You may know them as "Lumpia." I've been making Filipino spring rolls for as long as I can remember and the recipe is one of my family's treasures. I simply ran out of dinner ideas one night and thought that my spring rolls would pair so nicely with the noodles. Safe to say I wasn't wrong.
